2 eggs
4 cups whole milk
1 1/2 tsp sugar
1 1/2 tsp sea salt
1/2 bunch fresh spinach ( about 1 cup)
For the filling:

Procedure:
1) Cut the spinach stems and blanched the spinach leaves. After blanching throughly drained the spinach.
2) In the blender put all the ingredients, starting with the milk and ending with the spinach. Blend until smooth. Let the batter rest for 10-15 minutes.
3) Heat a non-stick skillet or crepe pan over medium heat. Lightly grease with butter and wipe off excess with a paper towel.
Pour about ¼ cup of batter into the center of the pan.
Immediately tilt and swirl the pan so the batter spreads into a thin circle or use the "T" spoon that comes in your crepe pan set.
Cook for 30–45 seconds, until the edges lift slightly and the bottom is lightly golden. Gently flip the crepe using a spatula or your fingers.
Cook the second side for 15–20 seconds.
Repeat with the remaining batter, lightly buttering the pan as needed.
Remove the crepe and place it on a plate, add the snowflake cheese and pepperoni hearts.
You can add some powdered sugar on top and a small pepperoni heart too.
