Thinking about Halloween Cookies?

 Right after schools starts I normally start thinking about Halloween cookies, but why the rush?

Don't get me wrong, I love Halloween cookies and they really have a super special place in my heart.  When I started selling cookies on Etsy, a very kind lady from Oklahoma order a lot of Halloween cookies for her granddaughter's party. I was so excited because it was a very big order and actually my first order for Halloween cookies!  

In the picture below you can see some of the cookies that I made for her, I already forgot about the cookie banner!! I need to show you how to make it, it is super fun to do!

Another day I will continue telling you more about that special lady,  because by Christmas her orders turned out even more special and I will always remember her with a lot of gratitude.


Coming back to the rush of "Thinking Halloween", I used to think  a lot of what is ahead and really not pay too much attention of the present moment and the current events, there are so many special dates in September and early October, like birthday celebrations, the announce of a baby coming on the way, a bridal showers, a move to a new house, a starting of a new job, anniversaries, Independence days, and so much more !

Summer is soon coming to an end and all the kids will be back to school! My daughter finished her school years by now, but back to school cookies have always been very popular around the house.

For now I will share some back to school cookies ideas for you!

 I loved sending my daughter one of these cookies in her lunchbox for her first day back. I am pretty positive that sending your own version of a back to school cookie treat will make their day.

Way before "Gluten free" were in vogue, almond and rice flour sweets and cookies were very popular around my house, but being sincere I have never made a cut-out cookie recipe using almond and rice flour, until now.

When you use almond flour instead of regular flour, your cookies will have a very different consistency and will also have a very short shelf life. The almond's fat (good fat) content is very high and can therefore get rancid. So I decided to make a mix of almond and rice flour to make these cookies, and they turned out really, really good and the flavor is just lovely.

You need to be more careful when you cut out the cookies too. Try to use simple shapes and the colder your cookie dough is before cutting the cookies the better.
