Traditional Green Chilaquiles
Ingredients:
15 corn tortillas
7-8 medium tomatillos
2-4 serrano peppers
1 bunch cilantro
1 tsp sugar
1 tsp salt (to taste)
1/4 cup queso fresco
2-4 tbsp jocoque or light sour cream
8 pickled red onion rings
PROCEDURE
1) Cut the tortillas in triangles and deep fried them at a temperature between 350º F-375ªF. Set them aside.
2) Peel and wash the tomatillos and put them in a little saucepan, add the serrano peppers (previously washed too) and add like a 1 cup of water and bring them to a boil and let them cook for about 3 minutes until they are soft.
3) In the blender put the tomatillos, serrano peppers, cilantro, sugar, salt and the water where you cooked the tomatillos, blend until smooth.
4) In a pan put a little bit of olive oil, add the salsa and when it starts to boil, turn off the heat and add the chips all at once, stir with two spoons until the salsa is evenly distributed.
Transfer them to a serving plate add one layer of chilaquiles, add cheese, more chilaquiles, more cheese, jocoque, onions and LISTO!!!
You can add a side of pinto beans, eggs or a meat of your choice!
