Pavlova is a very famous dessert around the world, it is a meringue based dessert, topped with Chantilly cream and assorted berries, that is commonly served around Christmas in Australia and New Zealand. Like those countries celebrate Christmas around summer time, this dessert is perfect for a hot day.
As some of the most famous desserts, it is not very clear who invented them, the strongest theory is that Chef Herbert Sachse is who have created the pavlova at Perth's Esplanade Hotel in 1935 in Australia and there are two versions on how this dessert was inspired by the famous ballerina Anna Pavlova.
One says that Chef Herbert made a dessert inspired in Anna Pavlova's tutu while she was touring Australia and New Zealand in the 1930's and the other one is that Herbert creation was named by the hotel's house manager, Harry Nairn, who remarked it was “as light as pavlova”.
Here is my version of Pavlova, besides sweet cream and berries, I added toasted hazelnuts and malted chocolate balls.
