I love how nice and soft the cookies look right after baking, you really don't need to decorate them, they look and taste amazing! 

 

Gingerbread Cookie

Prep time: 10 min


Bake:10-15 minutes

Servings: 24


Ingredients

• 2 sticks of margarine ( 200 g) at room temperature

• 3/4 cup sugar

• 1/2 cup molasses

• 2 tbs water ( lukewarm)

• 4 cups all purpose flour + 1/2 cup

• 3 tsp ground ginger

• 1 tsp cinnamon powder

• 1 tsp salt

• 1/2 tsp baking soda 


Procedure

1) Start by sifting  4 cups of flour and the rest of the dry ingredients and set them aside.

2) In a stand mixer beat the margarine at medium speed for 1 minute and then increase the speed to medium and add the sugar little by little until the mix is light and fluffy. About 4-5 minutes.


3) Add the molasses and continue mixing  for 1 minute, then add the lukewarm water. Scrape the sides of the bowl and mix one more minute, if the mix looks curdely, don't worry, is normal.


4) Lower the speed of your mixer to the lowest and add the dry ingredients and continue mixing until a ball is form and the dough leaves the sides of the bowl. You can add a little bit more of flour if need it, no more than 1/2 cup.


5) Roll the cookie dough in between two pieces of parchment paper to your desire thickness,  put it in the refrigerator for 4-6 hours, overnight is best. 


6) Pre-heat oven at 350 ºF 


7) Cut the cookie dough in your favorite shapes and bake them for 10-15 min until the edges turn a darker color. The time depend on the thickness of your cookies. The cookies will be still flexible when you take them out of the oven, they will harden when the start cooling down. 


8) Transfer them to a cooling rack.
