Velvet Taco Elote Copy Cat Recipe
Craving the bold, creamy, and smoky flavors of Velvet Taco’s famous elote—without leaving your kitchen?
Let me tell you exactly how to make this delicious side dish in your own kitchen, but first let me tell you a little bit about this recipe came to be.
Another thing that I like to do is to try to figure out the recipe of my favorite restaurant dishes. If I like something, I start paying attention to each bite and figure out what are main seasonings in the dish, normally the main ingredients are listed in the menu, but most of the times the signature flavors are not listed, and that is what makes a dish special, and in this occasion actually the way to cook the corn is where the delicious flavor is hidden.
What is the special flavor in the Velvet Taco Elote ?
Velvet taco used charred corn to make their famous side dish, ( I think now they used normal cooked elote )
When corn is charred, its flavor transforms in a way that makes it richer, sweeter, and more complex. The high heat caramelizes the natural sugars in the corn, enhancing its sweetness while creating those irresistible golden-brown spots. At the same time, a process known as the Maillard reaction develops deeper, slightly smoky and savory notes that you simply don’t get from boiling or steaming. The result is a perfect balance of sweet, smoky, and lightly crisp textures on the outside, while the inside stays juicy and tender—making charred corn the star of any elote-style dish.

Thanks for posting this. One of the best parts about the original recipe from Velvet Taco, for me, is that it does not include mayonnaise. Do you have a recommendation for how to recreate the recipe without the mayonnaise?
ReplyDeleteThank you very much for your comment, you can substitute the mayonnaise for sour cream or even Greek Yogurt or a mix of this two. Let me know how it turns out!
