Another thing that I like to do is to try to figure out the recipe of my favorite restaurant dishes.  If I like something, I start paying attention to each bite and figure out what are main seasonings in the dish, normally the main ingredients are listed in the menu, but most of the times the signature flavors are not listed, and that is what makes a  dish special, and in this occasion actually the way to cook the corn is where the delicious flavor is hidden. 

What is the special flavor in the Velvet Taco Elote ? 

Velvet taco used charred corn to make their famous side dish,  ( I think now they used normal cooked elote ) 

When corn is charred, its flavor transforms in a way that makes it richer, sweeter, and more complex. The high heat caramelizes the natural sugars in the corn, enhancing its sweetness while creating those irresistible golden-brown spots. At the same time, a process known as the Maillard reaction develops deeper, slightly smoky and savory notes that you simply don’t get from boiling or steaming. Ingredients You’ll Need for This Charred Corn Salad

You will need very simple ingredients like, fresh corn with husks, mayo, sour cream, queso fresco, key limes, salsa Valentina and sea salt.

Here is the recipe:
If you are going to grill the corn it will take you about 40-45 minutes to have them ready. You can also use frozen or canned corn and this recipe will take less than 10 minutes to have it ready!
Servings: 4
Ingredients 
4-5 large grilled- charred corn on the cob 
2 tbsp olive oil mayonnaise 
2 tbsp jocoque or grade A sour cream
1/2 crumbled queso fresco ( 5 oz )
4 key limes 
2-3 tbsp Valentina sauce
Sea salt 
Procedure 
Mix the mayo and jocoque and add a little bit of salt.
Slice the kernels from the cob
Add the mayo  mix 
Squeeze the key lime on top, add the cheese and mix very well, until combine.

Add the Valentina sauce, mix and ENJOY!

  1. Thanks for posting this. One of the best parts about the original recipe from Velvet Taco, for me, is that it does not include mayonnaise. Do you have a recommendation for how to recreate the recipe without the mayonnaise?

  2. Thank you very much for your comment, you can substitute the mayonnaise for sour cream or even Greek Yogurt or a mix of this two. Let me know how it turns out!
