To create a delicious and nutritious dandelion leaf pesto, you'll need fresh dandelion leaves, olive oil, garlic,Parmesan cheese, and, of course, pine nuts. The bold, slightly bitter flavor of dandelion leaves is perfectly balanced by the creamy, nutty elements of the other ingredients.

Ingredients

  • 2 cups dandelion leafs ( washed and dried)
  • 1/2 cup toasted pinenuts
  • I1/2 cup grated Parmessan cheese/li>
  • 2-3 garlinc cloves
  • 1/2 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Toast the Pine Nuts: Simply heat a dry skillet over medium heat and add the pine nuts. Stir frequently until they are golden brown and fragrant, about 3-5 minutes. Be careful not to burn them!
  2. Blend the Ingredients: In a food processor, combine the dandelion leaves, toasted pine nuts, Parmesan cheese, and garlic. Pulse until the mixture is coarsely chopped.
  3. Add the Olive Oil With the processor running, slowly add the olive oil until the mixture is smooth and well combined. Season with salt and pepper to taste.
