In our house we love tamales, although the ones we can buy here does not compare to the beautiful fluffy tamales from my hometown, we still enjoy a Tex-Mex tamal.
When we buy tamales there are always some leftovers and I like to use them to make a"Tamalon" this is how my family named this recipe and I like to call it "Tamale Casserole", sounds less aggressive I think, LOL.

This recipe is very versatile, you can change the salsa, the meat, the tamales and even the cheese, so every time you make it you can give it a little twist.
Beef Tamales Casserole
Preparation time: 10 minutes
Baking time: 20-25 minutes
Servings: 6-8 slices
Ingredients:
6 beef tamales
2 cups shredded beef (Eye of round roast)
2 cups green tomatillo salsa
1 cup shredded oaxaca cheese
3 Tbsp sour cream (optional)
