Fluffy chocolate cookies

These chocolate cookies are so soft and taste delicious, the cream cheese frosting and the crushed candy canes make them even more perfect for the Holidays!  The original recipe calls to add peppermint extract to the cookie batter and also to the frosting, I did not make them like that, but I think they will be so delicious as well!

    Super Fluffy Chocolate Cookies

Prep time: 15 min


Baking time: 14-16 min

Servings: 20-25 cookies 


Ingredients:

3/4 cup margarine

1 cup sugar

1 cup light brown sugar

2/3 cup chocolate cocoa powder

1/2 cup hot water ( 160-180 ºF)

4 tsp vanilla extract

3 large eggs

2 tsp baking soda

1 tsp kosher salt

5 cups all purpose flour

1 cup cream cheese frosting ( Recipe below)

1/2 cup candy cane crushed candies

Preheat oven at 350ºF and have lined baking sheets with parchment paper ready

Procedure

1) Sift the flour with baking soda and salt. Set aside.

2) Mix the sugars. Set aside.

3) Sift the cocoa powder. Set aside

4) Using a mixer, beat the margarine and sugar mix at medium speed for about 4-5 minutes until it is light and fluffy. Scrapes the sides of the bowl every now and then. Using a stand mixer will be easier but you use a hand mixer too.

5) On the lowest speed slowly add the cocoa powder and mix for a little bit and then increase the speed to medium and mix until combined, about 1 minute.

6) Add the hot water little by little and increase the speed to medium. Add the vanilla extract and mix until combined.

7) Lower the speed to minimum and add the eggs one at a time and continue mixing until combined.

8) Add the flour mix from step 1. and slowly start increasing the speed to medium high and mix for about one minute. Then increase the speed to maximum for a little bit and then lower the speed to medium until well combined.

These cookie dough will be similar to a cake dough, it does not need to form a ball. so don't add more flour.

9) With a cookie scoop start forming cookie dough balls and leave a 2 1/2 inches in between each ball as they will expand after baking.

10) Bake the cookies for about 14-16 minutes until the centers puff up and the edges are dry.

11) After baking, pull the parchment paper from the baking sheet and let the cookies cool until they are a little firmer.

12) Add the frosting below and add the crushed candy cane on top, 

 

 

Frosting

 

8 oz cream cheese (room temperature)

1/2 cup unsalted butter

2 to 3 cups powdered sugar ( I like the icing not to be so sweet, and I used 2 cups of powdered sugar, you can add more if you want)

2 tsp vanilla extract

 

Procedure

 

1) Sift the powdered sugar. Set aside.

2) Mix the cream cheese and the butter at medium speed until they are fluffy, about 4-5 minutes.

3) Add the powdered sugar little by little and continue mixing until combined. Scraps the sides of the bowl every now and then.

4) Add the vanilla and mix until combined.
