What is the Difference Between Cheesecake and Pay de Queso?
Pay de Queso is a pie made with a cookie crust very similar to a cheesecake crust, for the pay de queso I use Marias cookies and for the cheesecake I use graham crackers, these cookies have very different flavor and consistency. The cheese for the Pay de queso is Queso fresco and for the cheesecake I like to use cream cheese.
The Pay the queso custard has a firmer more dense consistency and the cheesecake custard has a creamy softer consistency. Both are very good, it just depends on your preference.

When I was a little girl this was the first recipe that my mom let me do it by myself.
It is very simple and easy to do, if you have some aspiring chefs in your house this is a great recipe to try, specially now that the summer vacations are just around the corner.
Cheese Pie
INGREDIENTS
4 oz unsalted butter ( room temperature )
30 galletas Marias
220g (7.7 oz) Queso fresco (Cacique brand )
1 can of condensed milk ( Nestle )
4 eggs
1 tbsp vanilla bean paste
Prep: 10 min
Bake: 60-75 min
Oven: 325ºF
PROCEDURE
1. Crush your cookies in the blender or food processor, until they look like flour.
2. In a 9 in pie plate, Put the crushed cookies and butter, toss to mix well, press onto the bottom and the sides to form a firm even crust.
3. In the blender pour the condensed milk, eggs, cheese and vanilla and blend till smooth.
4. Put your pie dish on a baking sheet, pour the mix over the pie crust and put it in the oven for 60-75 minutes, or until the edges of the pie start to brown and the center of the pie looks firm.
