Ginger Speculoos Pumpkin cookies

Gingerbread cookie recipe/ 3D Jack'o lantern cookie/ Jack'o lantern cookie/ Halloween cookies/ Pumpkin cookies

One of the things I love about this recipe, is that the cookies look so pretty when they come out of the oven that you don't have to spend too much time decorating them.They smell super good and are super delicious.

Here is the recipe:

MATERIALS:

3/4 cups of flour
1/2 tsp baking powder
1/2 tsp ginger powder
1/2 tsp ground cinnamon
1/2 tsp Koek and Speculoos spice
2 tbsp of dark brown sugar
8 tsp of butter (room temperature)
1/4 cup molasses

Royal icing, pumpkin cookie cutter, parchment paper and jolly ranchers

PROCEDURE:

1.- Sift the flour and baking powder and add the ginger, cinnamon,the Koek, and speculoos spice and mix them together.

2.- Add the brown sugar and mix again.

3.- Make a well in the center and add the butter and using your finger tips start mixing together all the ingredients until the mix looks like bread crumbs, then add little by little the molasses and continue mixing until you form a ball and the color look even.

4.- Roll out the dough in a parchment paper and put it in the fridge for some minutes.

5.- If you want to give it stein glass effect to the pumpkins you can crash some Jolly ranchers using a mortar. Click here for a step by step tutorial on how to do stained glass cookies.

6.- Cut out two pumpkins and one 3x5 in rectangle, as it show in the picture, If you like you can put the Jolly ranchers inside the eyes and mouth and place them over a baking tray lined with parchment paper.

7.-Bake at 350°F for 10-13 minutes and let them cool.

If you want you can decorate the pumpkin using royal icing, making some leaves and swirls or you can leave it plain, and it will have like a vintage look, like an old rusted tin Jack'o lantern.
